Thank you! Can't wait to make this. That Andy Rooney video also brought me lots of familiar comfort.

I am currently reading Terry Pratchett's Diskworld books, in order (their world makes no sense at times but you don't expect it to - and Pterry deals with it in absolutely hilarious ways). And you have given me an excuse to go get some parsnips - this definitely feels like a parsnip time of year.
I’ve been reading them too! Witches, then Sam Vines, Death, then the Wee Free men. I’m not a fan of Rincewind, so I ignore the earlier books. Is this my third or fourth time reading them? I don’t know, but I think everyone should escape to that world right now.
I have also banished Rincewind from my personal Discworld- but Tiffany Aching, the Witches, and the Watch keep me sane. Here's to Pterry's enduring wisdom!
Awwww...I kind of have a soft spot for Rincewind. He's saved the world several times! And he faces it all pretty much the same way I probably would - with sheer terror.
I love a good soup especially when cabbage is included. But I'm going to replace parsnips with turnips, I tossed a lot of seeds in my raised beds in September and now drowning in them.
I thought about using turnips! I love them! I’d definitely keep it to 1 cup for turnips as opposed to 1 to 1 ½ cups parsnips, since they’re a little bolder. I’m jealous that you have too many of them!

I have NOT frozen it but I can’t see any reason or ingredient that would prohibit it. Just don’t keep it longer than 2-3 months?? I’d probably divide into portions before freezing.

You have achieved post perfection, Emily! This is exactly what I needed to hear (encouragement!, commiseration!) and exactly what I need to cook this week. I think a soup recipe at this time of year is a great compliment to salad recipes. Soup has become one of my necessary comforts. Smoke has been coming out of my ears for months, and I feel like the girl in The Exorcist. I have been forcing myself to only read headlines at least once a week in order to determine if I actually need to continue reading the news. So, again, perfect post. I love the videos, and I am old enough that they were nostaglic for me. I love cabbage, and I love soup, and I love your writing. Chef's kiss to you.
