As an occasional intermittent faster, I have very much come to believe that any food is “breakfast” food … no matter the time of day, I’m breaking my fast! I also have a friend who doesn’t like sweets or traditional breakfast foods - she frequently has a ham sandwich first thing in the morning. So all that to say - who cares what we eat and what time we eat it? Good food can be enjoyed at any time! These recipes look great.
My favorite breakfast salad is the classic Salad Lyonnaise: frisee, thick lardons, and a poached egg. Sometimes also with fried potato cubes, because that's how a certain defunct restaurant in SF used to serve it for extra heft. Accompanied by some very strong tea, please.
And hey. If we can eat breakfast foods any time of the day, why can't we eat lunch and dinner food for breakfast, salad inclusive? My kid had a bowl of chili for breakfast today. I usually have a PB&J. The only real issue is that sometimes my digestion is delicate in the morning, but frankly that precludes a big swath of traditional American breakfast foods, too.
I LOVE that salad! And I agree! a lot of what we claim is good for us in the morning is not that good for us any time of day, however delicious. I'm really not much of a breakfast eater but salad in the morning is always welcome. PB &J, too, or peanut butter toast. I went away from PB for a long time, but I'm back. Thanks for these breakfast salad recipes! I grew up in a household where we ate what we liked for breakfast (my Dad often had soup, especially in the cold months). So, for years, I have eaten a casual salad for breakfast almost every day-looking forward to trying these two more formal ones very soon!

Well why not? Often enough we have crudités on the weekend breakfast table. I am not a big lover of sweet breakfasts, and since my doctor got after me to eat more protein it’s been eggs eggs eggs. I must try that first recipe— my pot of tarragon starting renewing itself madly when we brought it in from the ice storm before Christmas, as if in preparation for something new and yummy. Yes to breakfast salads! Like a previous commenter, I love a Salad Lyonnaise- but I've come to realize that almost any kind of egg tastes good with any kind of green, so I frequently put egg on greens and call it good. Bacon, chick peas, cheese, and whatever's in the fridge just adds to the fun. And always, always with strong black tea!
My wife lived in Japan for 3 years before we met, and we eat breakfast salads regularly on the weekends. Such a delicious component of a satisfying weekend.
My husband watches in horror when I yank leftover salad from the fridge and enjoy it with eggs, and whatever veggies or leftovers are on hand. But then, he never would touch pizza for breakfast either. I let my body tell me what it wants and when. For example, as I write these words, I am taking the odd break to eat a dish of brownie batter (triple chocolate, nuts, etc) by the spoon while the rest of the batch bakes in the oven.
PS: I would eat any of these salads for breakfast, lunch, or dinner. They are lovely.

I love salad for breakfast, but it's usually leftover from dinner the night before. I don't care if it's soggy!
