Listen, I feel like you might have hacked into my grocery list to see what I buy most frequently (avocado, lime, garlic) in order to create this dressing. I’m not MAD about it, I can’t wait to try it!

How long does dressing with buttermilk keep? I know I should slather it on and eat it in two or three sittings but for those moments when I have a tiny bit more self restraint…?? Or when I want to double the recipe for future me?

I wouldn't keep it for more than 4 or 5 days--it's really the avocado that will start to deteriorate. Buttermilk lasts longer. I doubled this--a cup and a half is for amateurs! But I tend to make that amount as a typical batch.

“But you never ever want to use a vinaigrette. Do you?” No! When I saw this line I immediately flashed to my great-aunt’s house where “salad” was some iceberg leaves and a bottled vinaigrette. Those things bring out the worst in each other — the bland leading the bland! Meanwhile I hardly ever buy iceberg (which is to say I never buy it.) But these dressings make me think about giving it another shot. What about avocado that comes in a squeeze tube? Fresh ones that are ripe are hit or miss where I live.

My grandmother made an iceberg salad with oil and vinegar and tomato and onion and I LOVED it. I love iceberg, but I get why people do not! I am going to say definitely no on the tube avocado; you can use a fairly ripe one in this dressing, and remember if you get a ripe avocado at the grocer, you can put it directly in the fridge when you get home and it will stay about that ripe for a few days.
