I've been thinking HARD about salad for breakfast. I want (need) to get more green vegetables in and I'd like an easy salad I can eat alongside scrambled eggs. I would appreciate any thoughts!
I love an herb salad for breakfast alongside scrambled eggs. Basically a mix of chopped fresh herbs (any kind) dressed with olive oil, lemon juice, salt and pepper. I keep the herbs already washed in an Oxo herb keeper, so I only need to grab a handful and chop. Itβs delicious and quick.
I've been bad this year about making salad, but I LOVE subscribing to your site, and using it as a reference site. For 2025, please more recipes for one or two people, as my Hubby is not really a salad lover and I need to make small batches. Thank you so much for this forum!
How about combining the veggies in your scrambled eggs? Not what youβre looking for? Avocado, baby greens, pumpkin seedsβ¦.these little salad-ish items were applied to a lot of egg breakfasts we had in the UK recently. Gentle dressing, not too punchy.
I love salad for breakfast. I top a βgarden saladβ with cooked lentils, medium boiled eggs (hard whites creamy centers) steamed beets a hunk of avocado and a balsamic vinaigrette.
I want to stop making βlazy salads.β My go to meal prep for a really long time has been to assembly line 4-5 salads and stick a protein on them. (Like the above salad or chicken, tuna, salmon, taco burger) Iβm always dazzled by your recipes but they donβt feel as make ahead friendly as I need them to be. Do you have any recos? roasted veggies can help up your salad game...they can add richness and nuttiness. And toasted nuts are another great addition (pepitas to a taco salad, pecans to a salad with dried fruit, peanuts in with a spicy dressing)--adding some different texture and flavor.
